Fall Happenings

Landon and Logan

Well summer has come and gone and the cool, crisp air has moved into the New England area. I LOVE the fall! It seriously is the best time of the year. Landon and Logan (my two boys) are settling into the school routine and I’m settling into having some me time. It is AWESOME! I’ve started working part time for my husband’s company, McElroy Films. I love working! It gets me out of the Mommy routine, which is much needed.

bone brothI can’t believe that November is here. Which really means… we’re already into Christmas season. All the stores have ALL their Christmas decorations out. I swear it gets earlier each and every year. I hate that. I like to savor each holiday as they come. With the cooler weather here, I’m diving into soup mode. I love soups. They are super easy meals and are oh so satisfying! I’m all for easy peasy with my two boys. Today, I have some amazing beef bone brother simmering away in the slow cooker. Just throw in some bones, onions, carrots, garlic, and some seasonings in a slow cooker and you got delicious and nutritious broth! It also saves quite a bit of money. I love to save money, while eating healthy! Here is a great link for a delicious stew recipe! Its super easy and oh so yummy! Its usually on my weekly menu!! Stew

Time to give a little update on my health. All is well in the Crohn’s department. I have good and bad days. The good days totally out weigh the bad ones, which is AWESOME. I’m still eating gluten free and kind of paleo. I try to eat mostly paleo but I’ll indulge in a few non-paleo items…potatoes. I tried to do another Whole30 a couple weeks ago. I only made it to day fifteen. I so suck at Whole30 challenges. I can’t seem to make it more than two weeks. I guess I wasn’t prepared enough and I know that’s extremely important to be successful in a Whole30. I did loose ten pounds in those fifteen days and have kept it off. Woohoo! I’m still exercising two –three times a week. I really need to improve in that department. I can’t seem to get to the gym more than that. I’d love to work out like four+ days a week. I think I’d see much faster results in my weight loss. Oh well, I guess I’m not going to be successful in everything I do. But at least I can try!

I just want to end this post with saying a BIG thank you to the people who have emailed me this month regarding my Weaning off Remicade post. I’m truly honored that people have found my blog and are searching for answers! There are alternative routes to take and I’m glad people are realizing medications are not their only option. Here’s to a happy and healthy holiday season!
